I found a pie recipe. I don’t vouch for it, though, since it also has pineapple in it.

Prickly Pear Pineapple Delight
1 graham cracker pie crust, chilled
1 envelope unflavored gelatin
scant 1 cup honey
2 cups prickly pear juice*
2 to 3 tablespoons lemon juice
1 (15 oz) can crushed pineapple, well drained
1 cup whipped topping

Seems pretty basic.
